#NationalPieDay Recipe: Sweet Potato Pie

National Pie Day is a great excuse to preheat the oven and grease your pie pan. If you’re looking for something to try, why not try out this sweet potato pie recipe? Sweet potatoes are highly nutritious and loaded with fiber and vitamins, so it’s almost like getting a serving of vegetables in with your dessert!
Ingredients:
1, 1lb sweet potato with skin
½ cup softened butter
1 cup white sugar
½ cup milk
2 large eggs
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
1 teaspoon vanilla extract
1 unbaked, 9-inch pie crust
How to Make:
Place sweet potato in pot and bring to a boil. Boil until tender– approximately 40 to 50 minutes.
Preheat oven to 350 degrees.
Break sweet potato and mix with butter using an electric mixer.
Add sugar, milk, eggs, vanilla, cinnamon, and nutmeg. Beat until smooth.
Pour filling into pie crust. Bake until a knife inserted in the center comes clean, and the crust is golden– approximately one hour.
Let cool and serve with a dollop of whipped cream. Enjoy!
